"This is a filling food that is warm and tasty" Our kids unanimously voted it a family favorite. That is not an easy thing to do. If you want left overs this recipe will provide plenty

Serves: 10 servings
  • ¼ cup of brown rice flour OR regular flour with salt and pepper
  • 2 Tablespoons grapeseed oil (or another oil for browning meat)
  • 2 lbs beef stew meat (chopped into smaller pieces)
  • 3 potatoes
  • 1 onion, chopped
  • ¾ lbs mushrooms, quartered
  • ¾ lbs baby carrots
  • 6 cups of beef broth
  • 6 cups of water
  • ¾ cups of barley
  • 2 bay leaves
  • salt to taste

  • (optional 1 Tablespoon each of oregano, basil , thyme,
  • parsley - my kids liked it best without the seasoning)

  1. Heat oil in large soup pot
  2. Add beef to flour mixture, add to oil, brown on all sides in batches, remove from the pan
  3. In the same pot saute onion until soft, add mushrooms and carrots
  4. For thickness and the opportunity to hide the veggies put the 2 cups of the veggie mixture and 1 cup of the broth in the blender
  5. Blend until its smooth
  6. Add it back to the pot
  7. Add the rest of the liquid, salt, spices (if you choose) and beef
  8. Simmer for 45 minutes
  9. Add barley and potatoes simmer 45 more minutes
