If you are like me, I have avoided any recipe with cream soup. Many of the easy recipes call for this ingredient. I decided to use a base that I have tweaked to replace creamed soups. It worked beautifully and I’d like to share it with you.
1/4 cup of butter
1/3 cup of brown rice flour (You can use white flour if you prefer)
1 1/2 cups of chicken broth
1/2 cup of milk
Salt & Pepper to taste
(Diced onions optional for flavor)
Optional Soups to make:
Cream of Chicken soup – you can add small pieces of chicken(diced)
Cream of Mushroom soup – add 1/2 cup of sauteed mushrooms (diced)
Cream of Celery soup – add 1/2 cup of sauteed celery (diced)
I have also doubled the recipe to use with different meals throughout the week.
